I want to clear history when Firefox closes, but exclude pinned tabs from this.

I am not aware of a method or addon that allows you to do that. You are able to start Firefox from a home page and that could include multiple tabs, that would be partly what you need.

Going slightly further but not actually clearing history you could have all pinned tabs in one window with no other tabs. If you close all other windows down first on startup you would have only the pinned tabs showing.

Remember of course you may use Private Browsing and those PB windows will not save History.

If you want change to Firefox it would do no harm to post in the WishList
