I just installed Thunderbird 38.8.0 on Ubuntu 16.04 and this weird problem sometimes occurs when I use the chat feature. When I switch focus to the Chat tab the top half of the window (the 'dialogue' section) often slowly "collapses" by itself. Then, I have to click and drag the "border" back down in order to see what the other person is/has typing/typed to me. I don't know why it's doing this or what causes it. When I use T-bird's Chat app under Windows 10 I don't have this problem.

The latest version of Thunderbird is 45.1.1. Try updating to the latest version.

Clicking on 'Help|About' doesn't give any indication that there's an update available, although you're right - there IS a newer version available, but how to update it? There is an updater executable in the T-bird directory but launching it has no effect and the only way I can see to launch the newest version of T-bird is manually via the file manager. I attempted to create a shortcut to the executable but again, this had no effect. When I try to update it from a Terminal window it says it's already the latest version(?)

I suppose you installed the Ubuntu provided version, not the vanilla version of Thunderbird from the Mozilla download site.

I'd suggest you ask in an Ubuntu forum what repository you need to get the latest version of Thunderbird.
