Firefox just did a major update and changed EVERYTHING. Gee thanks I liked it the way it was. How do I get all of my settings and extensions back to normal?

There was a major user interface overhaul in Firefox 89. I assume you aren't talking about those changes (old news), but about loss of your own customizations.
Did your Firefox perform a Refresh? The tell-tale sign is a new folder on your Windows desktop named Old Firefox Data -- do you have one of those?
Yes I have a new folder on your Windows desktop named Old Firefox Data. How do I tranfer the stuff from that back into firefox?
You can do selective copy/pastes of key files, or try a wholesale transplant.
