So to work with what Google is doing this coming May I've followed the steps shown in other posts to get that Authentication up and going. But when I have things set, I've restarted thunderbird, a pop up comes up asking me to sign into my account. I type the info in and then hit next and nothing happens. I just get the same page asking for the account name (email or phone number) again with it blank and no matter how many times I fill it in and hit next I just get sent back to the same thing.

Anyone know what might be going on and how to fix it?

This usually happens if cookies aren't accepted in TB Preferences/Privacy & Security. It's required for OAuth authentication to store a token in Saved Passwords.
