I presume you mean that when you use the return key, you get two blank lines. I don't know why people call this "double spacing". In a word processor, "double spacing" would mean using twice the usual space between all lines, not just when you use the return key for a new paragraph.
Go to Tools|Options|Composition|General→HTML and clear the checkbox "Use Paragraph format instead of Body Text by default".
I have the same problem. However, the checkbox "Use Paragraph format instead of Body Text by default" was already clear--yet there are still two blank lines between paragraphs whenever I hit Enter. How do I fix? Thanks so much.
I'd try it with the box both ticked and un-ticked. There is a small possibility that the actual setting is out of sync with the checkbox. We do occasionally see advice to change a setting to something else and then back again, just to make Thunderbird notice the change. Maybe you need to close and restart Thunderbird between changes, too. :-(
Problem solved. I don't know which worked--ticking and then unticking the box, or closing and restarting (I did both)--but it's fixed. Thanks so much!

Hi! There is no "Use Paragraph format instead of Body Text by default" option under Tools|Options|Composition|General→HTML. It only shows a box berofe "When using paragraph format, the enter key creates a new paragraph"
Same option. They changed the wording. Clear that checkbox.
