How do I completely uninstall to re-start clean?

I just installed Thunderbird on Windows 7 to move away from GMAIL, but I messed up some things. I was trying to split messages out into local folders, but I ended up with some messages getting deleted altogether and some doubled. So I thought I would just uninstall and start over, since all the messages are still on the GMAIL server. I followed the steps to uninstall, and the program does appear to have disappeared, but when I go back and install from the download, it comes back with my accounts, profiles and local folders all exactly the same, including all my errors, and it is only downloading messages that were not downloaded before.

How do I get back to a clean slate so I can start over and do it right without losing any messages?

your asked for it.

open windows file explorer by pressing windowskey+R and typing %appdata/% and pressing enter.

You will see a Thunderbird folder in the appdata folder that is opened. delete it. That is all. But if you loose something in your mail or contacts by doing so don't blame me :). I am answering your question, not doing something I would generally recommend.
