trying to bring my profile over to new machines (from xp to windows 7) and can't seem to make it happen

You do not copy the profile folder from your old to your new computer; Firefox has created a new profile folder with a new name and will not recognize the old profile folder name. You copy certain files (some items, like passwords, require more than one file) from your old profile to your new profile. See the following articles:

You should not try to copy the Extensions from the old profile to the new. Sometimes it works, but sometimes the extension database files do not update properly. You can use a profile backup Add-on, like FEBE, to backup and restore profiles, but there is a slight learning curve. I use FEBE to make regular backups of my profiles.
