How do I prevent full header metadata from being included inline on forwarded emails?

At some point, the way my Thunderbird forwarded emails, changed.

The full header metadata, (which is 44 lines of technical gibberish to a non-technical recipient), is being inserted inline on every forwarded mail. I can understand this being an option for special circumstances when a recipient desires this level of detail. However, it is an annoyance to the average businessperson to have to scroll past this to get to the intended content.

Currently, I spend a minute clicking the little cell-delete points to get rid of the header data table of every email I send.

How do I prevent this from being inserted in the first place?

I am familiar with the option that allows forwarding as an attachment rather than inline, however it is my understanding that this causes problems for iPhone users, making it an unacceptable solution.

From the menu bar select View-Header-Normal instead of All.
