I have managed to insert the following email signature into my Thunderbird 60.1 and this will appear as soon as I go into the WRITE window. My problem is that I need to send emails without having my company details displayed. My question therefore is can I have my WRITE window with NO automatic email signature and add the signature as an OPTION when I have finished typing my email ?

I suggest you try an add-on that lets you choose from multiple signatures, such as Quicktext or Signature Switch.
