I've tried in a number of place, even text I've typed myself... And often nothing happens when I long press text. At least nothing beyond my cursor maybe moving like a tap.

Expected: my Samsung Galaxy S8 phone to vibrate and highlight part of the text, giving a context sensitive menu.

All parts up to date on release versions (Firefox from Google Play Store, and OS). This worked before and has been broken for a long time for me.

This may be an issue with your devices screen, but have you tried Firefox Preview to see if the same problem is manifest there?
