I live in the Netherlands but have both Firefox and Windows set to English-US as my default (and only) language in the settings. However, when I browse to some sites, I notice I'm redirected to the Dutch-language version of the page and usually the URL will have the /nl slug added to it, or /?lang=nl but I do not want that. It happens with Google, Adobe, and many other major ones.

I don't use a VPN so obviously my IP address is detected as being from NL but is there a way to force websites in Firefox to only display in English? It even happens if I go to amazon.com, I'm redirected to amazon.nl.

That is the website policy and some persist in redirecting you to a page in the language they think is your local language based on a reverse DNS Lookup. There is not much you can do about this apart from using a VPN to get another IP address. Some websites allow to store your language choice in a cookie and you need to keep such a cookie, so if necessary create a cookie allow exception with the proper protocol (https:// or http://) and make sure not to use "Clear history when Firefox closes" to clear Cookies and Site Preferences (exceptions) but possibly use "Delete cookies and site data when Firefox is closed" to keep cookies with an allow exception.

There is not much you can do about this apart from using a VPN to get another IP address. Some websites allow to store your language choice in a cookie and you need to keep such a cookie, so if necessary create a cookie allow exception with the proper protocol (https:// or http://) and make sure not to use "Clear history when Firefox closes" to clear Cookies and Site Preferences (exceptions) but possibly use "Delete cookies and site data when Firefox is closed" to keep cookies with an allow exception.
