I wish to change the image behind the toolbar at the head of the Mozilla page - I have changed it once before (I now have a cityscape skyline) but no longer know how to change it. Thank you.

It sounds like you installed a persona (a type of theme/skin). You can get personas from http://www.getpersonas.com/en-US/gallery

For more details see using themes with Firefox.
