Can the email layout (where we add to, cc, subject, etc) be customized? I need to add columns for gather more information
Example:
Add a field called the type of action we took for the email... and then it appears as a column for reporting purposes.
What I'm trying to do is to use the email for my team which uses a centralized email account and add some additional columns when the email is replied and/or forwarded for gathering important information for metrics/statistics purposes.

I think add field is impossible ( thunderbird it's a mail client not a ERP) but you can you the custom flags.... and after you can filter this...
