I'm using a 2021 macbook air and cannot find a way to change the font size of anything in the Firefox toolbar. Not the bookmark folders in the toolbar, url address bar or tabs. The default is a microfont that is hard to read for some of us. The old add-on is no longer useful, and one other suggestion I was able to find involved changing the settings in configsys. That is an absurd solution for someone not familiar with changing code or intimidated by the process. I'd love to know if there is an easier solution that I'm missing here. And if not ...why?!

You could try the options in the Customize page with the Density button in the bottom left. Right-click the 3 bar menu or a toolbar and select Customize Toolbar.

Firefox uses your system settings for font size so perhaps you could change those.

Do you have a high density (Retina) display on your Mac ?

(I notice that you tagged the question as iOS, but you obviously are on macOS)

It might not be possible to do this without going to the about:config page if the DPI settings on your Mac are correct for your current monitor display.

You can set layout.css.devPixelsPerPx to 1.0 (default is -1) on the about:config page. Adjust its value in 0.1 or 0.05 steps like 1.1 to enlarge or 0.9 to reduce until icons/text looks right. You may need values above 2.0 if you have a high resolution display but make sure not to use values too large or too small.

  • modifying layout.css.devPixelsPerPx affects user interface and webpages (global zoom)

Firefox has a Zoom section in Settings to set the default zoom level for webpages.

  • Settings -> General -> Language and Appearance -> Zoom

You can open the about:config page via the location/address bar. On the warning page, you can click "Accept the Risk and Continue"to open about:config. For more info, see:
