I want to start firefox with a new profile using a keyboard shortcut. How can i do this? Thank you!

Hello florin1z, i think it is not possible, but wait if another contributor knows better, if you want from command line : firefox -CreateProfile test

Or to open profile manager using a key-pressed when I click the firefox shortcut?
Do you want to do this from inside Firefox or on the Windows desktop when Firefox isn't running?
You can create a desktop shortcut to open the Firefox Profile Manager by appending the -P switch and add a shortcut key to this shortcut, but you can't do this from inside Firefox.

Help > Restart with Add-ons Disabled... opens the Firefox SafeMode from within Firefox.
Yes, that starts Firefox in Safe Mode, but has nothing to do with the Profile Manager and creating profiles as that will make Firefox restart with the current profile.
The only way to do this would be to assign a shortcut key to a desktop shortcut that you can use to start Firefox with the Profile Manager. You would have to use the Profile Manager because otherwise you would have to delete a profile if you want to create a new profile under the same name.
