at the very minimum, thunderbird has to store the profiles.ini file in the users roaming profile. So you need to redirect appdata see http://www.virtualizationadmin.com/articles-tutorials/terminal-services/performance/configure-folder-redirection.html and http://kb.mozillazine.org/Moving_your_profile_folder_-_Thunderbird
