You can tap on start browsing or into the address bar to use Firefox without a Sync account.

Sync allows you to have your bookmarks and passwords from your desktop Firefox. If you want to set it up see, https://support.mozilla.org/en-US/kb/how-do-i-set-up-firefox-sync
