When I open a new tab, the search bar automatically defaults to "Search" even though I chose Google as my default search engine. Why cant I just choose what ever search engine I want and keep it that way until I decide to change it to something else.

Try to click the search icon (red pointer), and click "change search configurations" or go to the icon with the three lines (green pointer) and look for the settings icon (gear icon), click "Search" and then choose the search engine you want.

Run most or all of the listed malware scanners. Each works differently. If one program misses something, another may pick it up.
