In windows eMail clients you highlight the selection where you want to insert the hyperlink, right CLICK on the highlight and go to insert hyperlink in the drop down menu and CLICK on it, the copied URL is inserted as a hyperlink. How do you insert/embed a hyperlink in Thunderbird Write?

You can just paste the URL. Most email clients will render a valid URL in email message text as a clickable link.

If you want to dress it up so it looks like this use Insert|Link on the menu. You have to compose in HTML format to see this menu and use this feature.

Note that links are not active in Thunderbird's editing window. To check how it will look to the recipient, save your message as a draft and view it in the Drafts folder.
