How do I keep quantum and delete old replaced version?

Every time I download quantum, use it, then later shutdown computer, the old version of firefox comes back when I restart and I have to repeat the process of downloading quantum again.

Do a complete uninstall of Firefox, then reinstall Firefox 57 (Quantum).
