The button to restore previously closed tab is gone. I'd like it to be added again.

You can use the keyboard short cut : Reopen a closed tab in Firefox: Ctrl + shift + T for PC

From the 3 Bar Menu --> Library --> History --> Recently Closed Tabs If you have Firefox Menu Bar turned on at Browser top it is History --> Recently Closed Tabs Or there are various Extensions that can be used : https://addons.mozilla.org/en-US/firefox/search/?platform=windows&q=restore+previous+tab

Please let us know if this solved your issue or if need further assistance.

Why do I have to install a zillion of extensions now when I had it as a built-in interface in Firefox 56?

You ask for a toolbar button. The Firefox user interface only has menu items to reopen a closed tab, so if you want a button then you need an extension.
