During writing message I would like to replace a word with a predefined text. For example I will write "HI" and it will be replaced ( by using a hot key) with text "Hi Joe, How are you today?" Is that possible in the Thunderbird? Thanks

I think Clippings, which has hot key support, might be the solution.

Note also that you can pin items to the W10 clipboard (Winkey+V).

Thanks for the link. Where can I find a contact to the author of that addon?

I don't see an email address on the site, which is probably intentional, so I suggest you make contact through one of the avenues provided here.
