I just downloaded the current version of Thunderbird (78.0.1) and can't download ImportExport add-on. When I attempt, msg says 'not compatible'. Suggestions on what to do? Ultimately, I want to import an mbox zip of gmail (g-suite) email and attachments into my personal email.

Revert back to v68 available for download via https://archive.mozilla.org/pub/thunderbird/releases/68.10.0/

There is no rush to upgrade to v78.

You can do most of the functions of the add-on manually. Copy the mbox file, the large file in the zip with no extension, into Mail\Local Folders of the profile folder. Help/Troubleshooting, click Open Folder, close TB, copy the mbox.

If you try to revert to 68, you will likely encounter more problems. If the profile you're running in 78 is the one that was run in 68, even more issues arise. In that case, the best option is to create a new profile with 78, starting from Help/Troubleshooting, about:profiles, and add your accounts. Local mail, address books and other data can be transferred manually from the old profile to the new one if necessary.
