When you click to open the email files, they open in Thunderbird because it is the default program for opening those files. That doesn't mean it's fetching them online. If you want to open those files using a different program such as Notepad, so as to get a sense of accessing them offline, then you can do so using the '''Open With''' option in the right-click menu, but why would you want to do that when Thunderbird does the job of decoding and opening those email files just fine?
