When using the global search, Thunderbird also searches for similar terms. Even when using quotation marks. For example, when searching for a conference named "DIS", also results containing the German word "dies" (a pretty common word) are showed, rendering the search completely useless. How can I disable searching for similar terms?

This is the 'faceted search' feature of Global Search. Use Classic Search (Ctrl+Shift+F) to search an account or folder and subfolders, or Quick Filter Bar (Ctrl+Shift+K) to search a folder.
