I support Thunderbird in small business environments and IM is not a desirable/needed feature for now.

How can I disable the sidebar button and new account menu items ?

I really doubt you can. Although you might want to ask in the enterprise mailing list. What can be done with group policies is quite significant, as is what can be done with locking preferences.

Chat has been a part of Thunderbird for around 10 years though. Did you have it disabled before now?

Oops a link to the list would have been good.
