In some Windows Thunderbird displays e-Mails with the Options to "Reply" "Forward" "Junk" "Delete" etc.; but in other Windows, when I click on an e-Mail it displays a Number of them, with the Options to either "Archive" or "Delete". How can I change this for the standard Display, "reply", "Forward", etc.

I'm sure that you have figured it out now, but this happens when using the 'threaded' view and you are selecting the 'head' of a thread. There is in this case a '>' symbol displayed to the left. Click on it and it will expand the thread, allowing you to see and manage the individual messages. You can also stop the threaded view and go back to the chronological view (view menu / sort by)
