Modern answer:

  1. Go to https://addons.mozilla.org and search for the extension
  2. On the extension page on the left-side, go to "More Information" box, Version History at bottom
  3. Click "See all versions"
  4. Look for the "old" version you want and underneath it click "Download File" and install the extension when prompted. (it will overwrite the other version)
  5. Ensure you go to about:addons and click on that extension, setting "Allow automatic updates" to off
