Doesn't have to be Youtube, but any website that has a youtube video in it.

Basically every time I skip or fast forward a video it turns on caret browsing. Even if I disable it.

You can try to disable the F7 shortcut key that toggles caret browsing by setting the accessibility.browsewithcaret_shortcut.enabled pref to false on the about:config page if you do not want to use this feature or want to avoid entering caret browsing by accident.
