how do I track an employee's history in private browsing?
My employee has started using private browsing to do unrelated work searches during the day, How do I find out what she is doing online if she is using private browsing? I need to be able to monitor internet usage.

You can use your network hardware, Firewall's, Routers, modems, etc. to track internet usage. If it isn't currently set up consult the manual or call an IT professional to set up internet tracking.

The whole purpose of private browsing is to keep the browsing history in that session private. As soon as private browsing is exited, that private browsing session is deleted.
So, no, there isn't a way to track private browsing history.
You can try the following add-on to disable private browsing but your employee can still use Private Browsing mode if they enter Firefox in Safe Mode and disable the extension
Since version 1.4 clearing the browsing history is also disabled
