Thunderbird was starting to use up too much space on my disk so I wanted to move the emails to another dirve. For that, I switched "Thunderbird-Settings-Server Settings-Local Directory" to the new location and Thunderbird started downloading all emails from the server. Do I still need the old Thunderbird folder or can I safely delete that?

If you're referring to the mail folder you switched to a different drive, then yes, it's okay to remove.

So just to be sure, what I am looking to delete is the following folder: ....Home/user/.thunderbird/7in7vg9u.default-release/ImapMail

Is that OK?

No. That folder may have other accounts. The deletable folder would be within the ImapMail folder. This should be done with TB shut down and it's always safe to rename a folder, restart TB to see that all is well, and only then delete the folder. that confirms to you that it is no longer needed.
