How can I change the character set?

In Spanish we use accents in vocals and one more letter "ñ". When I receive some mails, and when I export my calendar to .csv, these characters are converted into odd combinations of letters-symbols.

I understand it is because of the "Character Set" but have been unable to change it.

1. How can I select the proper Character Set? 2. How can I change it?

The proper character set would be unicode and it is my understanding that Thunderbird uses it by default. Unless it is set differently on the PC.
