I cannot get the same size font in my emails. In a single email, I can have different size fonts. The small, medium, etc, categories are of no help. A medium font size seems to cover several actual different sizes. How do I get fonts that are same size? Why can't there be an option to simply assign font size using numbers like any other program?

Because it is not really applicable to HTML. Given you as the sender have zero control over the resolution of the screen or the size of the screen your missives will be read on. Determining the size of the font needed to render the mail in a readable form in not something that should rightfully be yours. That is one of the reasons Thunderbird has reading settings that can be set to override the senders font size settings.

Having problems with replies changing font sizes. That is unfortunately partly Thunderbird's fault, but mostly the fault of email programs that try and give you the absolute control over font size you desire. it overrides your settings when you are clicking reply and trying to put your replies inline in the body you have received.
