I don't know how I went from the production version to the beta version. I don't like the beta version because every time the beta version gets updated I loose most of my favorite extensions like QuickFilters and QuickFolders. What would be the easiest way to get back to the current stable version?

The safest way is to start fresh. I suggest - exit Thunderbird - make copy of profile, just to be safe - uninstall the beta - then install the regular version and reinstall accounts. - the addressbook (abook.sqlite) can then be imported from old profile with Tools>Import
