Firefox 56 crashed on me and when I restarted, Restore Previous Session was greyed out. I don't think I will be able to recover my previous session but I do have a sessionstore.js from a few days ago. Can I convert sessionstore.js to sessionstore.jsonlz4 to recover my older session tabs?

You need to remove an existing compressed sessionstore.jsonlz4 file and possibly rename the sessionstore-backups folder to make Firefox use the uncompressed sessionstore.js file. That should make Firefox fallback to sessionstore.js.

Make sure the startup setting is to automatically restore the session ("Show my windows and tabs from last time").
