When I try to log into my office (using Win 7) via Citrix I get an error message that states: "Cannot connect to Citrix Xen-App server:. SSL error 61: You have not chosen to trust "VeriSign Class 3 International Server CA - G3", the issuer of the server's security certificate".

What do I do to resolve?

You need to add that (root) certificate to the Citrix database.
