"Quantum" is a marketing name for the current stable version that most people should be using.

"Nightly" is a frequently updated, unstable test version that may have random new issues everyday. It's meant to be used only by testers and Firefox developers. Keep away from it.

Nightly is not a codename of a version but rather one of the development channels. Release < Beta (b#) < Nightly (a1)

Nightly gets checkins everyday and two updates each day. This can sometimes lead to issues until fixed, finished or reverted. The Nightly channel builds are meant more for Testers and not regular Firefox users.

A version on Beta channel can get say nine to fourteen builds lately on average.

There is also Developers Edition which is now basically same version as Beta builds but with added developer features.
