when I go to re-open some of my recent emails they appear completely scrambled and unreadable - esp if from a hotmail account - not all emails are affected.

Suddenly I find that some of my older emails (within last 2 months) when re-opened are completely scrambled- and may contain snippets seemingly from another email. This seems to esp apply to emails from Hotmail accounts. I recently updated Norton anti-virus - is this the culprit?

Try to rebuild the index file of the troubled folder. Right-click the folder - Properties - Repair Folder
