Is there options to set the time of 'Remind me later' in software updater?
I had limited bandwidth so I had to manually update my browser. The software updater show-up every (?) time I open the application probe me to update to latest xx.x.x.(_) version. Though I appreciate the notice, it annoy me that keep showing up everyday. Isn't there anyway that I could schedule when to notify me the latest version? or maybe schedule the updates instead?

You have probably missed at least two updates. Firefox updates about every six weeks and is now up to Fx48.0.1
I am not aware of a method of scheduling the checks to specific dates. You should only be notified when an update is available. You could turn of the checks for updates but that is not recommended.
Firefox is programmed internally to check for updates once a day, the first time Firefox is opened each day is when it checks. There is no "adjustment" or setting for that action. So "Remind me later" is tomorrow. the first time Firefox is used.
As John mentioned, you are two versions behind the "latest". When that happens you won't get an "update", the full version will be installed. Firefox 48.0.1 update was a 10MB .mar file; skip an update and you will get the full ~51Mb downloaded and installed.
