Can I use Thunderbird with two different hosting services?
I am using two hosting services for my e-mail addresses and have just set up the second one and noticed that the outgoing server defaults to the first hosting company so when I try to send an e-mail from the second it bounces back as undelivered from the first host. Am I going to need to manually change the outgoing server every time I want to send an e-mail from that account or should I just amalgamate everything into one hosting service?

Thunderbird can manage multiple accounts, and they can belong to different email providers.
At the top right of the Thunderbird window, click the menu button > Options > Account Settings
Select 'SMTP (Outgoing Server) at the bottom of the left pane in the Account Settings window.
What SMTP servers did you set up? There should be one for your second provider. If it isn't, create one as per your provider instructions.
I got that set up just fine - it's just that the default outgoing server belongs to my brother's company so if I want to send a new e-mail from my new e-mail address using my new hosting company I would need to manually change the outgoing server each time is that correct?

No. You need to assign the correct SMTP server to your new account.
At the top right of the Thunderbird window, click the menu button > Options > Account Settings
Select the account with your new hosting company in the left pane.
On the right side at the bottom of the Account Settings window: Pick the desired SMTP server for the account from the 'Outgoing Server (SMTP)' drop-down menu.
